Chewy Chocolate Chip Cookie


1 stick of unsalted melted butter 

1 tbsp coconut oil melted 

1 cup Lily’s unsweetened chocolate chips

1 1/2 cup almond flour 

1 1/2 teaspoon baking powder

1 tbsp beef gelatin

1 1/2 teaspoon vanilla extract 

1/2 cup Truvia or sweetener of your choice

1 large egg 

I tablespoon cinnamon 


Preheat oven to 350F

Mix all ingredients together, scoop and roll 15 balls, place on cookie sheet lined with parchment paper, press down on dough a bit, bake for 8-10 minutes until golden brown, allow cookies to sit and cool.
