Keto Pound Cake Muffins

Ingredients:

2 cups almond flour

4oz cream cheese 

4 large eggs

3 tbsp Kerrygold butter (melted)

1 tbsp coconut oil

1 tsp baking powder 

1/4 tsp pink salt 

1 tsp vanilla extract 

1/4 cup Splenda Naturals (stevia/erythritol blend)

 

Directions:

Preheat oven to 370 degrees 

Mix all ingredients together 

Line cupcake pan with 12 liners 

Pour batter into liner cups 

Place muffin tray in oven for 10-12 minutes or until tops of muffins are golden brown.

  1. I made these and they are great. I would call them a cornbread muffin. I didn’t really get the pound cake muffin feeling when I was eating one earlier. Great recipe!!! I give it two thumbs up!!!
